Peace of Cake

Here’s a recipe that makes a heavy and hearty moist cake that is perfect with a cup of tea on a cold winters morning.

Jude Fanton from The Seed Savers’ Network whipped it up with what she had in the cupboard, and seeds she had soaked that were going to be used in a meal but weren’t. It goes to show what can be made without following a recipe and utilising what you already have.


The key to this recipe is that you are encouraged to be creative, substituting some of these ingredients with a similar ingredient that you have in YOUR cupboard!

1 cup Soaked Dates (or dried fruit such as apricots etc)

soaked Sunflower Seeds (or any edible seeds such as pumpkin)

1 cup soaked Pearl Barley

2 Tblspns Almond Meal (or any nut meal)

1 1/2 cups Muesli

2 tspns Baking Powder

1 cup Cornflour (or any other flour)

1 tspn  combination of ground cloves, cinnamon, nutmeg and allspice

1/2 cup Milk (or enough to make a slightly runny pourable consistency)

1 egg


  • Blend dates, seeds and barley in a blender.
  • Put all the dry ingredients together in a bowl – almond meal, muesli, flour, spices, baking powder and blended date & seed mix
  • Mix the egg into it
  • Add the milk adding more if you need to achieve a more moist smoother consistency
  • Pour into a greased container

Bake @ 180℃ for 20 minutes and then turn down to 130℃ for 30 minutes.

Tip upside down and pour Brandy or Cointreau on it, enjoy with a cup of tea!
