Parsley Hedges in Cornwall Park

Enough garnish here for the whole of Auckland City...

Cornwall Park is in the centre of Auckland City, New Zealand and has a rich history and is home to trees both native and exotic that are over 100 years old.

After descending the infamous One Tree Hill I was amazed and delighted to see massive hedges of curly parsley being used as a landscaping plant. So I took the opportunity to have a munch and collect some to use in dinner that night.

Parsley is the world’s most popular herb and previously to being used in cooking, it was used medicinally. It has unique health benefits and is protective against cancer and other diseases and high in essential nutrients such as Vitamins K, C and A.

But don’t go overboard on it. Parsley is one of the few foods that contains oxalates, a naturally occurring substance in plants animals and humans that when consumed in excess may crystallize in body fluids and cause health problems.

The 40 year old Gingko Biloba trees in the park also have amazing health giving properties. They are originally from China and are considered to be rare in the wild. Today they are cultivated and the leaves are used to make teas, capsules and liquid extracts.

Gingko is used to treat a variety of conditions from headaches to impotence, and is useful in maintaining a healthy brain.
